- 1 pound breakfast sausage
- 2 cups pancake batter (prepared)
- 1 cup shredded cheddar cheese
- 4 large eggs
- 1/2 cup milk
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Chopped green onions for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- Cook sausage in a skillet until browned and crumbled. Drain excess fat.
- Spread cooked sausage evenly in the baking dish.
- Pour pancake batter over the sausage, spreading evenly.
- In a bowl, whisk eggs, milk, Dijon mustard, salt, and pepper. Pour over the casserole.
- Sprinkle shredded cheese on top.
- Bake for 30-35 minutes until golden and set in the center.
- Garnish with chopped green onions before serving.
Notes
- Can substitute sausage with cooked bacon or turkey sausage.
- For a richer flavor, add a splash of hot sauce to the egg mixture.
- Best served warm with fresh fruit or a side salad.
