Instructions
- Preheat grill to medium-high heat. Season chicken breasts with Cajun seasoning and olive oil.
- Grill chicken until cooked through, about 6-7 minutes per side. Let rest, then slice.
- Meanwhile, cook orzo in boiling salted water until al dente, about 8 minutes. Drain and set aside.
- In a large skillet, heat 1 tablespoon olive oil over medium heat. Add garlic, bell peppers, and cook until tender, about 5 minutes.
- Add Cajun spices, smoked paprika, cayenne pepper, and cook for 1 minute.
- Pour in chicken broth and heavy cream, bring to a simmer. Stir in cooked orzo and heat through.
- Serve orzo topped with sliced grilled chicken and garnished with chopped parsley.
