- 1 tablespoon olive oil
- 1 pound ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup dry orzo pasta
- 3 cups beef or chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: chopped parsley or green onions for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef or turkey and cook until browned, breaking it apart with a spoon.
- Stir in diced onion and cook until translucent, then add minced garlic and cook for another minute.
- Add dry orzo pasta and stir to coat with meat and aromatics.
- Pour in broth, season with salt and pepper, and bring to a boil. Reduce heat to low, cover, and simmer for about 10 minutes until orzo is tender and liquid is absorbed.
- Turn off heat and stir in shredded cheddar cheese and grated Parmesan cheese until melted and creamy.
- Garnish with chopped parsley or green onions, if desired. Serve hot.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in microwave, adding a splash of broth or milk to restore creaminess.
