  • Total Time: 2 hours
  • Yield: 12 rolls

Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 1 packet active dry yeast (2 ¼ teaspoons)
  • ¾ cup warm milk
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 1 large egg
  • ½ teaspoon salt
  • 1 cup fresh raspberries
  • ½ cup brown sugar
  • 2 teaspoons ground cinnamon
  • For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons fresh lemon juice
  • Zest of 1 lemon

Instructions

  1. Activate the yeast by combining warm milk and a teaspoon of sugar, sprinkling yeast on top, and letting sit until frothy, about 5-10 minutes.
  2. In a large bowl, whisk together flour, remaining sugar, and salt. Add melted butter, egg, and yeast mixture. Stir until dough begins to form, then knead on a floured surface for 8-10 minutes until smooth.
  3. Place dough in a greased bowl, cover, and let rise in a warm spot for 1-1.5 hours until doubled in size.
  4. Mix brown sugar and cinnamon in a small bowl. Gently fold in fresh raspberries. Roll out dough into a 16×12-inch rectangle. Spread melted butter over the dough, then sprinkle cinnamon sugar and raspberries evenly over it.
  5. Tightly roll the dough from the longer side into a log. Slice into 12 pieces and arrange in a greased baking dish. Cover and let rise for 30 minutes.
  6. Preheat oven to 375°F (190°C). Bake for 20-25 minutes until golden and fragrant.
  7. Prepare the lemon glaze by whisking powdered sugar, lemon juice, and lemon zest until smooth. Drizzle over warm cinnamon rolls before serving.

Notes

  • Use fresh, ripe raspberries for best flavor and appearance.
  • For a gooier consistency, add extra lemon juice to the glaze.
  • You can prepare the rolls ahead of time and refrigerate overnight before baking.
  • Reheat leftovers in the microwave for 15-20 seconds for fresh-tasting rolls.
