Ingredients
Scale
- 1.5 pounds of boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 3 cloves of garlic, minced
- 1/4 cup of grated Parmesan cheese
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 1 teaspoon of dried oregano
- 1 teaspoon of dried basil
- Salt and freshly ground black pepper to taste
- Wooden or metal skewers
Optional garnish: chopped parsley, extra Parmesan, and lemon wedges for serving.
Instructions
- In a mixing bowl, combine minced garlic, olive oil, lemon juice, Parmesan cheese, oregano, basil, salt, and pepper. Toss the chicken cubes in the marinade until well coated. Cover and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for 20-30 minutes to prevent burning. Thread the marinated chicken onto skewers, leaving space between pieces for even grilling.
- Preheat your grill to medium-high heat (375-400°F or 190-200°C) and clean the grates. Lightly oil the grates to prevent sticking.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is golden and cooked through (internal temperature of 165°F or 74°C).
- Optional: Brush with additional garlic-honey glaze or sprinkle with extra Parmesan cheese during grilling for enhanced flavor.
Notes
- Use uniform-sized chicken pieces for even cooking.
- Soak wooden skewers to prevent burning during grilling.
- Marinate chicken for at least 30 minutes for maximum flavor infusion.
- Preheat the grill thoroughly to ensure proper searing and prevent sticking.
- Use a meat thermometer to verify perfectly cooked chicken.
