Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix minced garlic, Parmesan, Italian herbs, salt, and pepper.
- Rub chicken breasts with olive oil and coat generously with the Parmesan mixture.
- Arrange chicken and diced potatoes on a baking sheet.
- Bake for 25-30 minutes until chicken is cooked through and potatoes are crispy.
- Garnish with chopped parsley and serve with lemon wedges.
Notes
For extra flavor, marinate chicken in garlic and Parmesan mixture for 30 minutes before baking. Serve with a fresh green salad for a complete meal.
