- 4 boneless, skinless chicken breasts
- 1 cup Greek yogurt
- 1 cucumber, grated
- 3 cloves garlic, minced
- 2 tablespoons fresh dill, chopped
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups cooked white rice
- Olive oil for drizzling
Instructions
- Preheat oven to 375°F (190°C).
- Place chicken breasts in a baking dish.
- In a bowl, mix Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper to make tzatziki sauce.
- Spread half of the tzatziki over the chicken breasts.
- Bake in the preheated oven for 25-30 minutes or until cooked through.
- Meanwhile, cook rice according to package instructions.
- Once baked, serve chicken over rice with remaining tzatziki drizzled on top and garnish with fresh herbs and lemon wedges.
Notes
- You can substitute chicken thighs for breasts for extra juiciness.
- For a dairy-free version, use coconut yogurt instead of Greek yogurt.
- Serve with a side of roasted vegetables for a complete meal.
