- 1 packet taco seasoning
- 1 can diced tomatoes (14 oz)
- 1 cup water or beef broth
- 8 oz (225g) pasta (penne or rotini)
- 1 cup shredded cheddar cheese
- 1/2 cup chopped cilantro
- Sliced jalapenos (optional)
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add the beef to the slow cooker along with taco seasoning, diced tomatoes, and water or broth.
- Cover and cook on low for 4 hours.
- Cook pasta separately according to package instructions until al dente.
- Stir cooked pasta into the slow cooker, mixing well.
- Serve topped with shredded cheese, cilantro, and jalapenos if desired.
Notes
- You can substitute ground chicken or turkey for beef.
- Adjust spice levels with more or less jalapenos.
- For a creamier version, add a splash of sour cream before serving.
