- 2 lbs chicken breasts, diced
- 4 cups corn kernels (fresh or frozen)
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 1 teaspoon thyme
- Salt and pepper to taste
- Chopped green onions and bacon bits for garnish
Instructions
- Place diced chicken, corn, chopped onion, garlic, chicken broth, thyme, salt, and pepper into the slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
- Stir in heavy cream and butter, cook an additional 15 minutes until heated through.
- Serve hot, garnished with chopped green onions and bacon bits.
Notes
You can add diced potatoes or scallions for extra flavor. For a gluten-free version, omit flour and use thickened coconut milk instead of heavy cream.
