- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- Juice and zest of 1 large lemon
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook orzo pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and red pepper flakes, sauté for 1 minute.
- Add shrimp to the skillet, season with salt and pepper, cook until pink and opaque, about 3-4 minutes per side.
- Stir in lemon juice and zest, cooking for another minute to combine flavors.
- Mix in the cooked orzo pasta and crumbled feta cheese, tossing gently to combine and heat through.
- Garnish with chopped parsley and serve immediately.
Notes
- For extra flavor, add a splash of white wine during cooking.
- You can substitute goat cheese for feta for a different tang.
