Ingredients
- 1 cup (130g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 2 large eggs
- 1/4 cup (60ml) fresh lemon juice
- Zest of 2 lemons
- 1 teaspoon vanilla extract
- Powdered sugar for sprinkling (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper, with edges hanging over for easy removal.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, stir the melted butter and sugar until combined. Add the eggs one at a time, mixing thoroughly after each addition. Incorporate the lemon juice, lemon zest, and vanilla extract. Mix until smooth.
- Gradually fold the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Pour the batter into the prepared baking dish and spread evenly. Bake for 20-25 minutes or until a toothpick inserted in the center comes out with moist crumbs.
- Cool completely in the pan on a wire rack. Once cooled, dust with powdered sugar for garnish.
Notes
- Use freshly squeezed lemon juice for the best flavor.
- You can adjust lemon zest for a more or less intense citrus flavor.
- Ensure even spreading of the batter for uniform baking.
- Monitor baking time to prevent overbaking for ideal fudgy texture.
- Enhance flavor with toppings like shredded coconut or chopped nuts.
