- 1 cup (120g) all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tablespoon lemon zest (from fresh lemons)
- 1/4 cup (60ml) fresh lemon juice
- 1 teaspoon vanilla extract
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking pan with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, combine the melted butter and sugar. Beat in the eggs one at a time.
- Stir in lemon zest, lemon juice, and vanilla extract.
- Gradually fold in the dry ingredients until just combined.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out moist with crumbs.
- Allow to cool completely in the pan on a wire rack.
- Once cooled, cut into squares or bars and dust with powdered sugar if desired.
Notes
- Store in an airtight container at room temperature for up to 2 days or refrigerated for up to 5 days.
- For longer storage, freeze wrapped bars for up to 3 months.
- Bring to room temperature before serving for optimal flavor.
