- 1 tablespoon grated lemon zest
- 1 teaspoon vanilla extract
- 2 1/2 cups (310g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- In a large bowl, mix melted butter and sugar until smooth. Beat in eggs one at a time, then stir in lemon juice, lemon zest, and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually fold this into the wet ingredients until just combined.
- Pour the batter into the prepared pan and bake for 25-30 minutes, until a toothpick inserted in the center comes out with moist crumbs.
- Allow to cool completely on a wire rack. Optionally, dust with powdered sugar or add a lemon glaze before serving.
