- 1 pound ground beef
- 1/2 cup bread crumbs
- 1/4 cup chopped parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 carrots, sliced
- 3 cups beef broth
- 1 cup milk or heavy cream
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Combine ground beef, bread crumbs, parsley, salt, and pepper. Form into small meatballs.
- In a large pot, heat olive oil over medium heat. Brown meatballs until cooked through, then remove and set aside.
- In the same pot, add diced onion and sliced carrots. Sauté until tender.
- Pour in beef broth and bring to a simmer. Add dried thyme, salt, and pepper.
- Return meatballs to the pot and simmer for 10 minutes.
- Stir in milk or heavy cream and heat through. Adjust seasoning as needed.
- Serve hot garnished with fresh parsley and enjoy the cozy flavors.
Notes
- For extra flavor, add a splash of Worcestershire sauce to the meat mixture.
- You can prepare the meatballs ahead of time and refrigerate before adding to the soup.
