- 1 lb ground beef (preferably grass-fed)
- 4 slices of bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1/2 cup diced pickles
- 1/4 cup mayonnaise or keto-friendly sauce
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Optional: sliced tomatoes and additional cheese for topping
Instructions
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter or non-stick spray.
- In a large skillet, cook ground beef over medium heat until browned; drain excess fat. Season with salt, pepper, garlic powder, and paprika.
- In a bowl, combine cooked beef, half of the cheddar cheese, diced onion, diced pickles, mayonnaise, and Dijon mustard. Mix thoroughly.
- Spread the mixture in the prepared baking dish. Top with remaining cheddar cheese and crumbled bacon.
- Bake in the preheated oven for 20-25 minutes until cheese is melted and bubbly. For added toppings, include sliced tomatoes during the last 5 minutes.
Notes
- Allow the casserole to cool before storing to prevent sogginess.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the microwave in 30-second bursts or in a 350°F oven until warmed through.
