- 1.5 lbs (680 g) chicken breasts, cut into 1-inch cubes
- 1/4 cup ranch dressing
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a large bowl, whisk together ranch dressing, minced garlic, Parmesan, olive oil, Italian herbs, salt, and pepper.
- Add chicken cubes to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated chicken pieces onto soaked skewers.
- Grease the grill grates slightly and place skewers on the grill.
- Grill for 10-12 minutes, turning occasionally, until chicken is cooked through and has grill marks.
- Remove from grill, garnish with additional Parmesan if desired, and serve hot.
Notes
- Soaking wooden skewers prevents burning.
- You can also bake these in a preheated oven at 400°F (200°C) for 20-25 minutes.
- For extra flavor, sprinkle chopped fresh parsley before serving.
