- 1 can coconut milk
- Frozen or homemade dumplings
- Carrots, sliced
- Bell peppers, chopped
- Fresh cilantro, for garnish
Instructions
- Heat oil in a large pot over medium heat. Add chopped onion and cook until translucent.
- Stir in garlic and curry powder, cook for 1 minute until fragrant.
- Add broth and coconut milk, bring to a simmer.
- Gently add dumplings and vegetables, cook until dumplings are heated through and vegetables are tender.
- Garnish with fresh cilantro before serving. Enjoy hot.

- For homemade dumplings, prepare your favorite recipe and steam or boil before adding to the soup.
