- 2 tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent.
- Stir in minced garlic and cook for another minute.
- Pour in chicken broth and bring to a boil.
- Reduce heat and stir in heavy cream and grated Parmesan cheese.
- Add dried thyme, salt, and pepper; simmer for 10 minutes.
- Serve hot, garnished with fresh parsley.
Notes
For a thicker soup, blend a portion of the mixture before serving. Use quality Parmesan for best flavor. Ideal with crusty bread on the side.
