Ingredients
Scale
- 2 ripe mangoes, peeled and chopped
- 1 cup coconut milk (full-fat for creaminess)
- 1-2 tbsp honey or agave syrup (optional, for added sweetness)
- 1 tsp lime juice (for a zesty kick)
- Fresh coconut flakes (optional, for garnish)
- Popsicle molds and sticks
Instructions
- Start by blending the peeled and chopped mangoes until smooth. You can use a blender or food processor for this step. If you prefer a chunkier texture, pulse a few times to leave some fruit pieces.
- In a bowl, combine the mango puree with coconut milk, honey or agave syrup (if using), and lime juice. Mix thoroughly until all ingredients are well integrated, creating a creamy and flavorful base for your tropical popsicle recipe.
- Carefully pour the mixture into your popsicle molds. Insert sticks into each mold and gently tap to remove air bubbles. For a decorative touch, sprinkle some coconut flakes on top before freezing.
- Place the molds in the freezer and freeze for at least 4-6 hours, or until fully solid. For best results, leave them overnight to ensure they set properly.
Notes
- For added flavor, include a splash of pineapple juice or coconut extract.
- If you prefer a dairy-free option, use almond milk or coconut water instead of coconut milk.
- Experiment with add-ins like chia seeds or chopped nuts for texture.
- Use organic and ripe mangoes for the sweetest flavor.
