- 1 lb cooked shredded chicken
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 cup salsa
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 packet taco seasoning
- 6 large flour tortillas, torn into pieces
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, taco seasoning, and sour cream.
- Layer torn tortillas in the bottom of a greased baking dish.
- Spread the chicken mixture over the tortillas and top with shredded cheese.
- Bake in the preheated oven for 20-25 minutes until bubbly and cheese is golden.
- Garnish with chopped cilantro before serving.
Notes
- You can add chopped jalapeños for extra spice.
- For a healthier version, use reduced-fat cheese and greek yogurt instead of sour cream.
