Ingredients

  • 1 lb cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 packet taco seasoning
  • 6 large flour tortillas, torn into pieces
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large mixing bowl, combine shredded chicken, black beans, corn, salsa, taco seasoning, and sour cream.
  3. Layer torn tortillas in the bottom of a greased baking dish.
  4. Spread the chicken mixture over the tortillas and top with shredded cheese.
  5. Bake in the preheated oven for 20-25 minutes until bubbly and cheese is golden.
  6. Garnish with chopped cilantro before serving.
