Ingredients
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
- Zest of 2 lemons
- ½ cup freshly squeezed lemon juice
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, combine melted butter and sugar. Beat in eggs one at a time, then add vanilla extract, lemon zest, and lemon juice. Mix until smooth.
- Add dry ingredients gradually to the wet mixture, stirring gently until just combined. Fold in chopped strawberries.
- Pour the batter into the prepared pan, spreading evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for at least 15 minutes. Once cooled, dust with powdered sugar. Slice and serve.
Notes
- Use fresh strawberries for maximum flavor and texture. If using frozen, thaw and pat dry to avoid excess moisture.
- For an extra tangy flavor, add a teaspoon more of lemon juice or lemon zest.
- This recipe can be made gluten-free by substituting all-purpose flour with a gluten-free flour blend.
- Try swapping strawberries with blueberries, raspberries, or blackberries for variety.
- Add white chocolate chips or chopped nuts for extra texture and flavor.
