- 2 cups cooked chicken, shredded
- 12 oz spaghetti
- 1 can diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon red pepper flakes
- 1 tablespoon olive oil
- 1 cup chopped green onions
Instructions
- Preheat oven to 375°F (190°C). Cook spaghetti until al dente, then drain.
- In a large skillet, heat olive oil and sauté diced tomatoes with green chilies and Cajun seasoning for 5 minutes.
- Mix cooked spaghetti, shredded chicken, sour cream, and half of the cheese in a large bowl.
- Pour mixture into a greased casserole dish. Top with remaining cheese and red pepper flakes.
- Bake uncovered for 20-25 minutes until bubbly and golden on top.
- Garnish with chopped green onions before serving.
Notes
- You can substitute cooked turkey for chicken for a different flavor.
- Adjust red pepper flakes to control heat levels.
