Instructions

  1. Start by dicing the onion, mincing the garlic, peeling and chopping the potatoes, and preparing the chicken breasts or thighs. This preparation ensures a smooth cooking process and flavorful results.
  2. Place the chicken breasts into the slow cooker. Add a splash of olive oil, smoked paprika, cumin, salt, and pepper. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  3. Approximately 30 minutes before serving, remove the chicken and shred it using two forks. Return the shredded chicken to the slow cooker along with the diced potatoes, corn, diced onion, and garlic. Pour in the chicken broth and stir to combine.
  4. Cover and continue cooking on low for an additional 1-2 hours, allowing the flavors to meld and the potatoes to become tender. For a creamier texture, stir in the milk or heavy cream during the last 15 minutes of cooking.
