  • Total Time: 20 minutes
  • Yield: 4 servings

Ingredients

Scale
  • 1 lb ground beef (or turkey for a leaner option)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ½ cup diced onions
  • ½ cup diced tomatoes
  • ½ cup sour cream (optional for serving)
  • 2 tablespoons vegetable oil or cooking spray
  • Fresh cilantro (for garnish, optional)

Instructions

  1. Heat a skillet over medium-high heat. Add ground beef, salt, pepper, and garlic powder. Cook until browned, breaking apart the meat as it cooks. Once cooked, smash the burger with a spatula to create thin, crispy layers. Remove from heat and set aside.
  2. Lay a flour tortilla on a clean surface. Spread a layer of the cooked smashburger mixture evenly over half of the tortilla. Top with shredded cheddar and Monterey Jack cheeses, diced onions, and tomatoes. Fold the tortilla over to enclose the fillings.
  3. Heat a large skillet with 1 tablespoon of vegetable oil over medium heat. Carefully place the assembled quesadilla into the skillet. Cook for about 3-4 minutes until the bottom is golden brown and crispy. Flip and cook for another 3-4 minutes until the other side is crispy and cheese is melted.

Notes

  • Ensure your skillet is well-heated for maximum crispiness.
  • You can customize fillings with jalapeños, hot sauce, or vegetables.
  • Reheat leftovers in a skillet to maintain crispiness.
