- 1.5 pounds beef sirloin, sliced thin
- 3 bell peppers (red, green, yellow), sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 2 teaspoons cornstarch (optional, for thickening)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat and brown the sliced beef on all sides. Transfer to slow cooker.
- In the same skillet, sauté onions and garlic until fragrant, then add to the slow cooker.
- Add sliced peppers, beef broth, soy sauce, and Worcestershire sauce.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- If desired, mix cornstarch with a little water and stir into the slow cooker to thicken the sauce, cooking an additional 15 minutes.
- Serve hot over steamed rice garnished with fresh herbs.
