- 4 boneless, skinless chicken breasts
- 2 pounds baby potatoes, halved
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 teaspoon Italian seasoning
- Salt and freshly ground black pepper to taste
- 2 tablespoons olive oil
- 1 cup chicken broth
Instructions
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden brown.
- Place halved potatoes in the bottom of the slow cooker, and top with seared chicken and minced garlic.
- Pour chicken broth over the mixture and cook on low for 6-7 hours or high for 3-4 hours.
- In the last 30 minutes of cooking, sprinkle grated Parmesan cheese over the chicken and potatoes.
- Garnish with chopped parsley before serving.
