Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 pounds baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 cup chicken broth

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken for 2-3 minutes per side until golden brown.
  3. Place halved potatoes in the bottom of the slow cooker, and top with seared chicken and minced garlic.
  4. Pour chicken broth over the mixture and cook on low for 6-7 hours or high for 3-4 hours.
  5. In the last 30 minutes of cooking, sprinkle grated Parmesan cheese over the chicken and potatoes.
  6. Garnish with chopped parsley before serving.
