- 1 lb beef strips or chicken breast
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper to taste
- 1 tbsp olive oil
- Flour or corn tortillas for serving
- Fresh cilantro and lime for garnish
Instructions
- Place the sliced beef or chicken into the crockpot.
- Add sliced peppers, onions, and minced garlic over the meat.
- Sprinkle chili powder, cumin, paprika, oregano, salt, and pepper evenly over the ingredients.
- Drizzle with olive oil and toss to coat everything well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours until the meat is tender.
- Serve hot with warm tortillas, garnished with cilantro and lime wedges.

- You can substitute chicken with beef or even vegetables for a vegetarian version.
- Add hot sauce or jalapenos for extra spice.
