Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
- Stir in minced garlic and cook for another minute.
- Add crushed tomatoes, vegetable broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and let simmer for 10 minutes to allow flavors to meld.
- Add tortellini to the soup and cook until tender, about 5 minutes.
- Adjust seasoning if needed, then serve hot, garnished with fresh basil and grated Parmesan cheese.
