Instructions
- Preheat grill or skillet over medium-high heat.
- Season chicken breasts with chili powder, cumin, paprika, garlic powder, salt, and pepper.
- Cook chicken until fully cooked and juices run clear, about 6-7 minutes per side. Slice into strips.
- In bowls, layer cooked rice, grilled chicken, black beans, corn, and diced peppers.
- Top with shredded cheese, cilantro, and a squeeze of lime.
- Serve immediately or store for meal prep in airtight containers.
