- 4 large sausage links or 1 cup cooked sausage crumbles
- 8 large eggs
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- Salt and pepper to taste
- Optional fresh herbs for garnish
Instructions
- Cook sausage in a skillet until browned and cooked through. Slice or crumble and set aside.
- Scramble eggs in the same skillet until fluffy; season with salt and pepper.
- Lay tortillas flat and distribute cooked sausage and scrambled eggs evenly among them.
- Sprinkle cheese over the eggs and sausage.
- Roll up each tortilla tightly to form a wrap.
- Optionally, toast roll-ups in skillet or oven until cheese melts and exterior is crispy.
- Slice in half if desired and serve hot, garnished with herbs.
Notes
- For a vegetarian version, substitute sausage with sautéed vegetables or plant-based sausage.
- Can be assembled in advance and refrigerated; reheat in oven or microwave before serving.
