- 8 ounces of your favorite pasta
- 2 cups fresh spinach, roughly chopped
- 1 cup sliced mushrooms
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5 minutes.
- Add minced garlic to the skillet and cook for 1 minute until fragrant.
- Stir in heavy cream and grated Parmesan cheese, cooking until the sauce thickens slightly.
- Add chopped spinach and cook until wilted, about 2 minutes.
- Mix in the cooked pasta, season with salt and pepper, and toss to combine.
- Serve hot, garnished with fresh basil or parsley.
Notes
- Feel free to add red pepper flakes for a spicy kick.
- You can substitute heavy cream with Greek yogurt for a lighter version.
