Ingredients

- 1 pound smoked sausage, sliced
- 1 cup long-grain rice
- 2 cans black beans, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
- In the same skillet, sauté diced onion and minced garlic until translucent.
- Add rice to the skillet and cook for 2-3 minutes, stirring frequently.
- Pour in chicken broth, add cumin, paprika, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
- Stir in black beans and cooked sausage. Cook for another 5 minutes to heat through.
- Garnish with fresh cilantro before serving.
Notes
- You can substitute smoked sausage with chicken sausage for a lighter version.
- For extra spice, add chopped jalapeños during sautéing.
