  • 1 pound smoked sausage, sliced
  • 1 cup long-grain rice
  • 2 cans black beans, drained and rinsed
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove and set aside.
  2. In the same skillet, sauté diced onion and minced garlic until translucent.
  3. Add rice to the skillet and cook for 2-3 minutes, stirring frequently.
  4. Pour in chicken broth, add cumin, paprika, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15 minutes or until rice is tender.
  6. Stir in black beans and cooked sausage. Cook for another 5 minutes to heat through.
  7. Garnish with fresh cilantro before serving.

Notes

  • You can substitute smoked sausage with chicken sausage for a lighter version.
  • For extra spice, add chopped jalapeños during sautéing.
