- 1 pound smoked sausage, sliced
- 2 cups long-grain rice
- 1 can (15 oz) black beans, drained and rinsed
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tablespoons olive oil
- 2 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Sauté sausage slices until browned, then remove and set aside.
- In the same skillet, sauté onions, garlic, and bell peppers until tender.
- Add rice and cook, stirring, for 2 minutes.
- Pour in chicken broth, add cumin, paprika, salt, and pepper; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in black beans and cooked sausage, cook for another 5 minutes until heated through.
Notes
- Feel free to add hot sauce for extra spice.
- Use vegetarian sausage for a plant-based version.
