- 4 tilapia fillets
- 2 roasted red bell peppers, peeled
- 1 roasted yellow bell pepper, peeled
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 lemon, juiced

Instructions
- Preheat oven to 400°F (200°C) and roast bell peppers until charred, then peel and set aside.
- Puree roasted peppers with garlic, olive oil, lemon juice, salt, and pepper until smooth.
- Season tilapia fillets with salt and pepper on both sides.
- Heat a skillet over medium-high heat with a little olive oil and cook tilapia for 3-4 minutes per side until golden and cooked through.
- Serve tilapia topped with roasted pepper sauce and garnish with fresh parsley.
Notes
- For extra smoky flavor, char peppers directly over an open flame before peeling.
- Serve with a side of steamed vegetables or rice for a complete meal.
