- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 1 cup shredded cheese (cheddar or mozzarella)
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat 1 tbsp olive oil in a skillet over medium heat. Sauté garlic and mushrooms until tender. Season with salt and pepper.
- Cut a pocket in each chicken breast and stuff with sautéed mushrooms and cheese.
- Secure with toothpicks if necessary.
- Brush chicken with remaining olive oil, season with salt and pepper, and place on a baking sheet.
- Bake for 25-30 minutes until cooked through and golden brown.
- Garnish with fresh herbs before serving.

- Ensure not to overstuff the chicken to prevent spillage during baking.
