Instructions
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together flour, baking soda, and salt.
- In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla, mixing until well combined.
- Fold in chopped apples and ground cinnamon.
- Form dough into 1-inch balls, then roll in cinnamon sugar.
- Place on baking sheet and flatten slightly.
- Bake for 10-12 minutes until edges are golden brown.
- Cool on wire racks before serving.
