- 1 lb cooked shredded chicken
- 12 small taco shells
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1 cup chopped lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 tablespoon taco seasoning
- 2 tablespoons olive oil
- Fresh lime wedges for serving
Instructions
- Preheat oven to 400°F (200°C). Lightly brush taco shells with olive oil and place on a baking sheet.
- Mix shredded chicken with taco seasoning and evenly distribute among the taco shells.
- Sprinkle shredded cheddar cheese over the chicken in each shell.
- Bake for 12-15 minutes or until the cheese is melted and shells are crispy.
- Top with chopped lettuce, diced tomatoes, cilantro, and a squeeze of lime.
- Serve immediately with sour cream on the side.
Notes
- Feel free to add sliced jalapenos or avocado for extra flavor.
- Use leftover cooked chicken or rotisserie chicken for quick prep.
