Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery. Cook until vegetables are tender.

- Add broth, cooked chicken or beans, diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
