- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 cups fresh spinach leaves
- Salt and freshly ground black pepper to taste
- Optional: crushed red pepper flakes for added heat
Instructions
- Season the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes per side until golden and cooked through. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 30 seconds. Add spinach and cook until wilted, about 2-3 minutes.
- Pour in heavy cream, bring to a simmer. Stir in Parmesan cheese until the sauce thickens. Season with salt, pepper, and red pepper flakes if desired.
- Return the chicken to the skillet, spoon sauce over it. Cover and simmer for 5 minutes to meld flavors. Serve hot, garnished with extra Parmesan if preferred.

- Use fresh spinach for best flavor and texture.
- Thaw frozen spinach thoroughly and drain excess water before adding.
- You can substitute chicken thighs for breasts if preferred.
