Instructions
- Preheat oven to 400°F (200°C).
- In a small bowl, mix balsamic vinegar, honey, and minced garlic.
- Season chicken breasts with salt, pepper, and thyme.
- Heat 2 tablespoons olive oil in a large oven-proof skillet over medium-high heat.
- Sear chicken for 4-5 minutes on each side until golden brown.
- Pour balsamic mixture over chicken, add vegetables around the chicken.
- Transfer skillet to oven and roast for 20 minutes until chicken is cooked through and vegetables are tender.
- Remove from oven, garnish with fresh herbs if desired, and serve hot.
