- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach, chopped
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and garlic; cook until translucent.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken and cook for 5 minutes.
- Stir in gnocchi and cook until they float and are tender, about 3-4 minutes.
- Reduce heat and add spinach, heavy cream, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Serve hot, garnished with grated Parmesan cheese.
Notes
- Feel free to add other vegetables like carrots or celery for extra flavor.
- You can substitute heavy cream with half-and-half for a lighter version.
