- 4 boneless, skinless chicken breasts
- 2 medium zucchinis, sliced
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken breasts with salt, pepper, oregano, and thyme.
- Heat 1 tbsp olive oil in a skillet over medium-high heat and sear chicken until golden on both sides, about 3-4 minutes each side.
- Arrange sliced zucchini, cherry tomatoes, and seared chicken in a baking dish.
- Drizzle with remaining olive oil and sprinkle minced garlic on top.
- Sprinkle shredded mozzarella evenly over the dish.
- Bake in the preheated oven for 20-25 minutes until cheese is bubbly and chicken is cooked through.
- Garnish with fresh basil before serving.
Notes
- Feel free to add olives or artichoke hearts for extra flavor.
- For a spicy kick, add red pepper flakes.
