  • 8 oz. penne or rotini pasta
  • 2 chicken breasts, grilled and sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente, then drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, grilled chicken slices, cherry tomatoes, cucumber, olives, feta, parsley, and basil.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
