- 8 oz. penne or rotini pasta
- 2 chicken breasts, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup kalamata olives, pitted and sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the pasta in salted boiling water until al dente, then drain and rinse with cold water.
- In a large bowl, combine cooked pasta, grilled chicken slices, cherry tomatoes, cucumber, olives, feta, parsley, and basil.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving for maximum flavor.
Notes
- You can substitute grilled chicken with cooked shrimp or omit for a vegetarian version by replacing chicken.
- For added flavor, marinate the chicken in lemon and herbs before grilling.
- This salad is best served fresh but can be stored in an airtight container for up to 2 days.
