- 4 cups water or vegetable broth
- 2 sheets of kombu (seaweed)
- 1/2 cup thinly sliced green onions
- 1/2 cup silken tofu, cubed
- 1 tablespoon soy sauce
- 1 teaspoon mirin (optional)
- Fresh seaweed for garnish
Instructions
- Bring water or broth to a gentle simmer in a pot.
- Add kombu and simmer for 10 minutes, then remove kombu.
- Stir in soy sauce and mirin, then add tofu and cook for 2 minutes.
- Divide soup into bowls, garnish with green onions and seaweed, serve hot.
Notes
- Adjust soy sauce for saltiness according to taste.
- Keep the broth clear by avoiding vigorous boiling after adding tofu.
