Instructions
- Mix diced peaches, sugar, cornstarch, lemon juice, vanilla extract, and cinnamon in a bowl. Let sit for 10-15 minutes.
- Preheat oven to 375°F (190°C). Roll out puff pastry and cut into 8 squares.
- Spoon about a tablespoon of peach filling onto each square. Roll each into a tight spiral to form a muffin shape.
- Place the rolled cruffins in a greased muffin tin. Brush with beaten egg.
- Bake for 20-25 minutes until golden and puffed. Cool slightly before serving.
