Ingredients
Scale
- 1 cup fresh corn kernels or canned corn, drained
- 1 cup all-purpose flour
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped green onions
- 1 large egg
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying (vegetable or canola oil)
Instructions
- In a large mixing bowl, combine flour, baking powder, salt, and black pepper. In a separate bowl, whisk together the egg and milk. Gradually pour the wet mixture into the dry ingredients, stirring until smooth. Fold in the corn, cheddar cheese, and green onions.
- Heat enough oil in a deep frying pan over medium heat until it reaches approximately 350°F (175°C). Test the oil with a small batter drop; if it sizzles and rises, the oil is ready.
- Drop spoonfuls of batter into the hot oil using a spoon or cookie scoop. Do not overcrowd. Fry each side for 2-3 minutes until golden brown and crispy. Use a slotted spoon to drain onto paper towels.
- Serve immediately with dipping sauces like sour cream, spicy salsa, or aioli for the perfect snack or appetizer.
Notes
- Use different cheeses such as Monterey Jack or Gouda for varied flavors.
- Add chopped jalapeños or chili flakes for heat.
- Ensure the oil is hot enough before frying for maximum crispness.
- Fresh corn yields the best flavor, but canned works well too.
- Avoid overcrowding the pan to maintain proper temperature and crispiness.
