Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan with butter or non-stick spray and set aside. Mash bananas until smooth, measuring about 1¼ cups.
- In a large bowl, whisk together melted butter, honey, eggs, and vanilla extract. Add mashed bananas and mix until smooth.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add dry ingredients into wet mixture, stirring gently until just combined.
- Optional: Fold in chopped walnuts or chocolate chips.
- Pour batter into prepared loaf pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
Notes
- Use very ripe bananas with brown spots for best flavor and sweetness.
- Avoid overmixing to keep the bread fluffy and light.
- Can be stored at room temperature in an airtight container for 2-3 days, refrigerated for up to 1 week, or frozen for up to 3 months.
