Ingredients
Scale
- 3 ripe bananas, mashed
- 1/2 cup honey
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: 1/2 cup chopped walnuts or chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with butter or non-stick spray.
- In a large mixing bowl, beat together the softened butter and honey until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and mashed bananas until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, gently folding until just combined. Fold in chopped walnuts or chocolate chips if desired.
- Pour the batter into the prepared loaf pan, spreading it evenly. Bake for approximately 60-70 minutes or until a toothpick inserted into the center comes out clean. Avoid opening the oven door during the initial baking phase.
Notes
- Use very ripe bananas for maximum sweetness.
- Do not over-mix to keep the bread fluffy and light.
- Bake until the top is golden brown and a toothpick tests clean.
- Wrap tightly in plastic wrap or aluminum foil when storing overnight to retain moisture.
- You can freeze slices for future enjoyment—wrap individually and thaw at room temperature.
