Instructions
- Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray.
- In a large bowl, mash the bananas until smooth. Mix in melted butter, eggs, and vanilla extract until combined.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring gently until just combined.
- Mix brown sugar and ground cinnamon in a small bowl to create the cinnamon swirl mixture.
- Pour a third of the batter into the prepared loaf pan, sprinkle with cinnamon sugar, then layer with another third of batter. Repeat until all batter and cinnamon mixture are used, creating a marbled swirl.
- Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 15 minutes before transferring to a wire rack.
