Ideal for breakfast or a delightful snack, this easy-to-make bread combines ripe bananas with a luscious cinnamon-spiced swirl for a bakery-quality experience at home.

  • Total Time: 1 hour 20 minutes
  • Yield: 8 slices

Ingredients

Scale
  • 4 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • For the cinnamon swirl:
  • 1/4 cup brown sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan with butter or non-stick spray.
  2. In a large bowl, mash the bananas until smooth. Mix in melted butter, eggs, and vanilla extract until combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring gently until just combined.
  4. Mix brown sugar and ground cinnamon in a small bowl to create the cinnamon swirl mixture.
  5. Pour a third of the batter into the prepared loaf pan, sprinkle with cinnamon sugar, then layer with another third of batter. Repeat until all batter and cinnamon mixture are used, creating a marbled swirl.
  6. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 15 minutes before transferring to a wire rack.

Notes

  • Ensure bananas are very ripe for maximum sweetness.
  • For extra texture, fold in chopped nuts like walnuts or pecans.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to a week.
  • Freeze slices for up to 3 months; thaw at room temperature before serving.
