- 3 pounds ripe tomatoes, halved
- 4 cloves garlic, peeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup vegetable broth
- 1/4 cup fresh basil leaves
- 1/2 cup heavy cream (optional)
Instructions
- Preheat oven to 400°F (200°C). Toss tomatoes and garlic with olive oil, salt, and pepper. Roast for 25-30 minutes until caramelized.
- Transfer roasted tomatoes and garlic to a blender. Add basil and blend until smooth.
- Pour the mixture into a pot, add vegetable broth, and bring to a simmer. Stir in heavy cream if desired.
- Serve hot, garnished with additional basil leaves.
Notes
- For a vegan version, omit the heavy cream or use coconut milk.
- You can adjust the seasoning to taste with extra salt or pepper.
